It’s in a village of oysterfarms in Aytré, not far from La Rochelle, in a « bourgeoise » villa facing to the ocean, already known for her good reputation when it used to belong to Mr & Ms Pouget that Stéphanie & Johan settled in, in January 1998.
Johan Leclerre, young Chef owns the kitchen. His culinary talent uses local products for each season. Neither disorganized nor molecular, his personal cooking style is Classical Contemporary always looking for the tastes. A innovating but not destabilzing cuisine.
Stéphanie & Johan never stop working: it’s their nature, their leitmotiv is their restaurant, they always forge ahead.
In 2001 after few renovations in this «bourgeoise» villa, they created Version Original, a Lounge Bistrot on ground floor of La Maison des Mouettes.
Then in 2005, he decided, with his team, to open a luxury hotel with 12 rooms, all with sea view, but marshes around the establishment put a brake on the project. In October 2009 we can admirate a little luxuous hotel, with a contemporary architecture, which will welcome his new guests. Based on stilts, like the front of a ship facing to the ocean, the suites and the rooms invite you to the contemplation.
The possibility to have the breakfast outside, looking at Fort Boyard or Aix Island is absolutely exceptional.
